We stocked up on homemade salsa and hummus and headed Up North for the long weekend.

This salsa recipe is better than anything you can buy in the store- *I promise* and it's fresher too.

Every day was a fabulous beach day.
Each ended like this with appetizers on the deck. Pretty relaxing... well, as relaxing as it can be with a seven year old that loves to sing and dance *constantly*.

Salsa time
2 onions
1 jalapeno
4 large tomatoes
2-3 limes
1 large bunch of Cilantro- chopped
Pre heat your oven to 425 degrees.
Add 1 roughly chopped onion, 4 large whole tomatoes and 1 jalapeno to a baking sheet. Drizzle olive oil and 2 Tbs. of minced garlic over the top and bake until lightly charred. The jalapeno will be slightly blackened. Let the tray cool and then puree everything in a blender/ Cuinine Art.
Place the mixture in a large bowl and add 1 finely chopped onion, one large bunch of cilantro, and juice of 2-3 limes. Salt and pepper to taste. Add a little cayenne pepper if you still want more heat.
It will taste even better if you have time to chill it over night.
